Spicy Jerk Burgers

Hamburgers:

2 pounds lean ground beef or chuck
1 tablespoon dry jerk seasoning (recipe follows)
2 tablespoon grated onion
6 hamburger rolls
Lettuce and tomatoes

Method:

  • Prepare jerk seasoning (see recipe below).
  • Combine lean beef with dry jerk seasoning and onion.
  • Shape meat into 6 patties and grill 4-5 inches above hot coals until brown on both sides. (Grill approximately 12-15 minutes total, for medium doneness).
  • Slice rolls in half and grill for 1 minute.
  • To serve, place patties on rolls with lettuce and tomato.
Dry Jerk Seasoning:

1 teaspoon ground Jamaican pimento (allspice)
1 teaspoon chili powder
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 1/2 teaspoon salt
1 teaspoon coarsely ground pepper
Pinch of garlic powder

Method:

  • Mix together ingredients, place in a jar and shake well. Close jar tightly and store in a cool, dry place for up to six months.
  • Add to chicken, beef, and mixed dishes.
