Orange - Honey Acorn Squash

Eat it as a side dish, snack, or dessert.

½ cup orange juice
¼ cup dried cranberries
2 ounces honey
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 acorn squash, halved lengthwise and seeded
2 tablespoons ground walnuts (optional)

1. In a large saucepan, stir together orange juice, cranberries, honey, cinnamon and nutmeg. Set aside.
2. Place squash halves, cut side down, on cutting board and cut crosswise into ½-inch thick slices. Add to saucepan with orange-honey mixture.
3. Cover and simmer over medium heat 10 to 12 minutes or until squash is fork tender and orange-honey mixture coats squash.
4. Add walnuts; toss to evenly distribute. Serve warm.

Note: Raisins or dried cherries may be used in place of the dried cranberries.
