Cuban Food Pyramid

Combination Foods:
Morosy Cristianos (white rice and black beans) - Meat and Grain
Arrozcon Pollo (chicken with rice) - Meat and Grain
Picadillo (minced beef) - Meat and Vegetable
Garlic Marinated Roasted Chicken
Eat it as a main dish..
1 3 Pound Frying Chicken
10 Garlic Cloves, minced
1/4 Cup Lime juice
1 Cup White Wine
1 Teaspoon Ground Cumin
1 Teaspoon Salt
1/2 Teaspoon Freshly Ground black pepper
1 Small Onion
2 Shallots
1/4 Cup Olive Oil
Rub chicken inside and out with minced garlic. In a food processor, place all remaining ingredients except the olive oil. Pulse 15-20 seconds until the onion and shallots are liquified. Place chicken in a glass bowl, pour marinade over top and refrigerate for one hour. Remove chicken and preheat oven to 375 degrees. In frying pan, heat olive oil over medium-high heat. When pan is hot, brown chicken on both sides, one half at a time. Remove and place in a shallow roasting pan, skin side up, and roast 30-35 minutes or until cooked through. Place the chicken on a carving board and cut it into serving pieces. Serve immediately.
