Japanese Food Pyramid

Combination Foods:
Fish Cakes (meat, grain)
Tuna Noramaki (meat, grain)
Cucumber Noramaki (vegetable, grain)
Chicken with Mandarin Oranges
American Style Japanese Cuisine
1 pound Chicken Breasts, without skin (4-4 ounce breasts)
3 tablespoons Soy Sauce, low sodium
3 tablespoons Sherry
1/4 teaspoon pepper
1 can (11 oz.) mandarin oranges
1 medium onion
Method:
Spread chicken breasts in a shallow pan. Mix soy sauce, sherry, onion, and seasonings; pour over chicken. Let stand in refrigerator for about 2 hours, turning once or twice. Drain, reserving marinade. Lightly brown chicken under broiler. Place in baking dish. Combine juice from orange segments with reserved marinade; pour over chicken. Cover and bake at 350 degrees for 30 minutes. Add orange segments. Return, uncovered, to oven for 15 minutes.
